Zdeněk Pohlreich evaluates Hospůdka u Kaštanu in Jenčice

Zdeněk Kotulan, a professional from the insurance and banking sectors for seventeen years, is attempting to realize his dream of running a restaurant in Jenčice, located in the Czech Central Highlands. His establishment, Hospůdka u Kaštanu, focuses on burgers, steaks, fresh fish, and Thai soup, but has struggled to attract local customers.

In an effort to save the business, Kotulan sought assistance from renowned chef Zdeněk Pohlreich. Upon inspection, Pohlreich discovered that the kitchen is staffed by enthusiasts lacking completed culinary education. The owner and his partner, Milan Pytlík, are self-taught with incomplete training. Pohlreich’s initial tasting revealed significant issues, including underseasoned tartare, tough meat in soups, and incorrectly sliced steaks, noting that the menu requires substantial improvement to succeed.
