Arctic Ocean underwater wine aging experiment
Overview
The Norwegian shipping company Hurtigruten and Italian winery Rivetto conducted an experiment to age Barolo wine underwater in the Arctic Ocean. A total of 1,002 bottles of 2021 Barolo Docg were submerged at a depth of 34 meters near Kirkenes, Norway, at 70 degrees north latitude.
The wine aged for 12 months in conditions of total darkness, a pressure of approximately 4 bar, and temperatures between five and six degrees Celsius, following an initial 24-month period in traditional oak barrels.
Upon recovery, comparative tastings led by Henrik Dahl Jahnsen, president of the Norwegian Sommelier Association, indicated that the ‘Arctic Barolo’ differed from bottles aged in traditional cellars. Dahl Jahnsen described the underwater-aged wine as having a ‘brighter, more youthful ruby color’ and a ‘more precise aroma profile of wild fruits and flowers,’ along with ‘fresher and crisper tannins.’
