Additionally, once metal cans are opened, contents should be moved to airtight containers and refrigerated to prevent oxidation. Subsequent warnings expanded on home canning techniques, noting that failure to use appropriate heat treatments based on food acidity is a critical risk factor. While high-acid foods like jams may use boiling water baths, low-acid foods such as meat meat, legumes, and vegetables require pressure canning. Experts cautioned that botulinum toxin is especially dangerous because it can be present in food that appears, smells, and tastes normal, meaning sensory checks are insufficient for detecting contamination. Physical indicators of danger include bulging lids, leaking, foaming, mold, or abnormal gas release. Recent guidance specifically addresses the preparation of containers, noting that pouring hot sauce into jars that have only been rinsed can leave invisible bacteria, yeasts, and molds on the glass, threads, and lids. To mitigate these risks, experts recommend a two-step process: boiling empty jars in water to eliminate germs and preheat the glass, followed by a formal sterilization process, such as a water bath, after the jars are filled and sealed. It is also advised to inspect jars for cracks and use new rubber seals where required.
