Ube, a purple yam native to the Philippines, Philippines (botanically known as Dioscorea alata), has seen a rise in international culinary popularity due to its unique flavor and vibrant violet color. The ingredient has become a social media trend, frequently used in products like the ‘ube latte’ and various pastries to provide natural coloring. Its flavor profile is often described as having notes of vanilla, nuts, and earthiness. This growing global demand has led to a significant increase in Philippine production. In the second quarter of 2026, production reached 1,681.67 metric tons, a 22.5% increase from the previous year. To sustain this growth, the Philippine Department of Agriculture has distributed more than 60,000 planting materials to farmers in regions such as Leyte and Bohol. The trend is expanding into new commercial markets, notably India’s specialty café sector. In major Indian cities like Mumbai, Delhi, Bengaluru, and Hyderabad, ube is being used in lattes, cheesecakes, and ice creams. Cafés in these regions can reportedly command a 20–30% premium on ube-based products. On a broader scale, Philippine ube-based exports reached approximately US$3.06 million in 2025. While this remains small compared to traditional agricultural exports, it signals a shift from a cultural trend to a genuine commercial opportunity driven by the ingredient's distinct marketing advantages.
