Recent longitudinal studies have identified significant links between the consumption of plant-based oils and reduced mortality risks compared to saturated fats like butter. A study involving approximately 200,000 individuals published in JAMA Internal Medicine found that replacing butter with olive, canola, or soybean oils was associated with a 17% reduction in mortality risk. This reduction applied to total mortality, cancer-related deaths, and cardiovascular disease deaths. Researchers noted that replacing 10 grams of butter daily with an equivalent amount of plant oil was specifically linked to a 17 percent lower risk of total mortality, though experts cautioned that as an observational study, the findings indicate a correlation rather than a direct cause-and-effect relationship. Subsequent research published in the Journal of the American College of Cardiology focused on olive oil consumption among 90,000 adults in the United States. This study found that consuming more than 7 grams of olive oil daily was associated with a 19% lower risk of cardiovascular death. The research noted that substituting 10 grams of saturated fats—such as butter, margarine, or dairy fats—with olive oil could result in a total mortality risk reduction ranging from 8% to 34%. In alignment with these findings, health guidelines, such as those from the German Nutrition Society, recommend that saturated fatty acids comprise no more than 10 percent of total daily energy intake. While butter is not classified as a toxin, experts advise moderation and emphasize replacing saturated fats with unsaturated fats from plant sources to support cardiovascular health.
