The 2026 season for mole de caderas, a traditional dish recognized as the intangible cultural heritage of Puebla, has been launched to promote tourism and economic development. In Tehuacán, municipal authorities and the Secretariat of Tourism Development announced a festival scheduled from October 18 to 25. The event is expected to feature over 120 restaurateurs and artisanal cooks, alongside a tourist corridor for more than 60 regional artisans. Organizers estimate an attendance of approximately 30,000 people and an economic impact exceeding 35 million pesos. A special event on October 22 is planned to offer 1,000 servings of the dish at a reduced price. Governor Alejandro Armenta Mier emphasized the importance of preserving these culinary traditions. As Tehuacán is a primary hub for the tradition and Puebla ranks third nationally in goat meat production, officials anticipate the use of roughly 12,000 heads of goat livestock this season. The total expected economic impact for the season is projected to exceed 100 million pesos. Following the official inauguration by Governor Armenta Mier, the state is integrating the event into a broader tourism strategy involving infrastructure improvements and the promotion of ‘Pueblos Mágicos’. Ana Laura Altamirano, Secretary of Agriculture and Rural Development, noted that Puebla’s goat meat production exceeds 4,000 tons, valued at more than 400 million pesos. The initiative aims to leverage Tehuacán’s connectivity with Oaxaca and Veracruz to benefit rural families and the local economy.
