Nébih summer food safety guidance

Overview

The National Food Chain Safety Office (Nébih) has issued guidance to prevent foodborne illnesses and gastrointestinal issues during summer activities.

Initial advice focused on summer travel, warning that food stored in car trunks or back seats can enter a temperature ‘danger zone’ between 5 and 60 degrees Celsius. Travelers were advised to avoid highly perishable items like deli meats, cream cheeses, and mayonnaise-based salads, opting instead for hardier produce such as apples, pears, carrots, and radishes.

Subsequent guidance expanded to include safety protocols for outdoor grilling. Nébih recommended maintaining the cold chain by purchasing meat and dairy last and using cooling bags. To prevent cross-contamination, the agency advised using separate utensils and cutting boards for raw meat and ensuring meat reaches an internal temperature of at least 72 °C.
