Parasite contamination in Brazilian skipjack tuna

Overview

Researchers at the Federal University of Santa Catarina in Brazil have identified widespread parasite contamination in skipjack tuna. A study published in the journal Ocean and Coastal Research analyzed 53 locally caught specimens, finding that 96 percent were infected with parasites, totaling over 1,600 worms.

The identified parasites include the genera Trypanorhyncha, Anisakis, and Rhadinorhynchus. While the intestines showed the highest concentration of infection, researchers noted that larvae were also present in the stomach and muscle tissue. The kidney and heart were the only organs found to be free of parasites in every fish sampled.

Experts indicate that the health risk to humans is manageable through cooking fish to an internal temperature of 63°C, freezing it at −20°C for one week, or through industrial canning processes. The findings highlight the necessity of rigorous sanitary inspections and immediate evisceration to prevent larvae from migrating from the organs into the edible muscle tissue.
