Traditional cheese aging practices in Turkey
Overview
Traditional cheese production and aging methods continue to be practiced in various regions of Turkey using natural environmental elements.
In the Meram district of Konya, producers utilize natural caves to age tuluk cheese for four to five months. This additive-free process involves women processing milk and storing it in goat or sheep skins within cool, humid cave environments. The Meram Municipality has scheduled a “Cave Cheese Extraction Festival” for late October to celebrate this cultural heritage.
In the Akseki district of Antalya, Yörük producers on the Çimi Plateau employ a different traditional method by using snow pits for aging. At altitudes of approximately 1,900 meters, cheese is placed in containers or animal skins and lowered into pits 30 to 50 meters deep. These pits maintain temperatures between minus 15 and 20 degrees Celsius, allowing the cheese to mature for two to three and a half months before being brought to markets in the autumn.
