Ambev details production methods for non-alcoholic beers
The Brazilian brewing industry is increasingly investing in technology to expand its non-alcoholic beverage portfolios to meet changing consumer lifestyles. Alexandre Esber, a master brewer and professor at Ambev’s Beer Academy, explains that the production of non-alcoholic beer follows many traditional steps, including the selection of water, cereals, hops, and yeast.
The primary differences occur during fermentation. Two main methods are utilized: the use of special yeast strains that limit alcohol conversion or the interruption of fermentation before alcohol forms. Another method involves dealkalization, where beer undergoes conventional fermentation followed by vacuum distillation at low temperatures to remove alcohol.
Ambev manages quality through extensive testing and maintains a portfolio that includes brands such as Stella Pure Gold, Michelob Ultra, Budweiser Zero, Corona Cero, and Brahma 0.0%. These products target consumers seeking lower carbohydrate options or gluten-free alternatives.
