Barley consumption can help lower LDL cholesterol levels

Consuming barley during dinner can assist in lowering LDL cholesterol levels. Because the liver reaches its peak cholesterol production during sleep, the composition of the evening meal plays a critical role in cardiovascular health.

Barley is a rich source of beta-glucans, a type of soluble fiber recognized by the European Food Safety Authority (EFSA) for its ability to reduce cholesterol. In the intestines, these beta-glucans form a gel that traps bile acids, facilitating their elimination. To produce new bile acids, the liver is forced to pull cholesterol from the blood, thereby lowering circulating levels.

Studies suggest that a daily intake of approximately 3 grams of beta-glucans can lead to a significant reduction in LDL cholesterol. A serving of roughly 70-80 grams of cooked barley is sufficient to reach the recommended daily dose for these benefits.
