Catamarca entrepreneurs receive charcuterie and food safety training

The Municipality of the Capital, through its Subsecretariat of Social Development and in collaboration with the Catamarca Rural Extension Agency of the National Institute of Agricultural Technology (INTA), conducted a practical training workshop titled ‘Charcuterie and Sausages: Production and Good Handling Practices.’

Held at the Cocina de Emprendedores, the session was led by veterinarian Daniel Ortiz. The workshop aimed to provide local small-scale producers with technical skills to optimize and diversify their production units. Participants received training on meat product preparation, raw material transformation, and food safety protocols, including biosecurity standards, temperature control, and bromatological conservation.

The initiative is designed to support the urban popular economy by strengthening self-employment and value-added manufacturing, helping entrepreneurs transition toward formal commercialization in the local market. Participants who completed the training received official certificates.
