Dietary habits and timing impact blood sugar and metabolism

Recent research highlights how meal timing and food sequencing can significantly influence blood sugar levels and metabolic efficiency.

A study published in the European Journal of Nutrition involving healthy Chinese men found that consuming low-fat milk or soy milk before eating white bread can mitigate blood sugar spikes. Specifically, drinking soy milk 30 minutes before eating bread reduced the postprandial glucose peak by 30% and the glycemic index by 50%. Consuming low-fat milk 30 minutes prior resulted in a 30% reduction in the glucose peak and a 36% reduction in the glycemic index.

Additionally, gastroenterologist Dr. Cheng Hung-chih, citing a 2025 study in the journal Nutrients, emphasizes the importance of the first meal of the day. The period one to three hours after waking is identified as a metabolic golden window when insulin sensitivity and calorie-burning efficiency are highest. Delaying the first meal excessively can trigger compensatory eating, where rising hunger hormones and falling satiety hormones lead to overconsumption of high-calorie foods later in the day.
