Sweet potatoes are nutrient-dense, providing beta-carotene, fiber, and potassium. However, because they are starchy and carbohydrate-heavy, they can cause blood sugar spikes in individuals with diabetes. Managing portion sizes and pairing them with protein and healthy fats can help mitigate these effects. Regarding digestive health, sweet potatoes contain mannitol, a polyol that may trigger symptoms in those on a low FODMAP diet. The impact depends on the variety and serving size; for instance, white sweet potatoes generally contain lower FODMAP levels than orange-fleshed varieties.

Sourdough bread also affects blood glucose due to its carbohydrate content. While the fermentation process involving lactic acid bacteria and wild yeast may slightly slow starch digestion and reduce glucose spikes compared to conventional bread, it still raises blood sugar. Choosing whole-grain versions can provide more fiber and protein to help slow digestion, and avoiding sugary toppings is recommended for those managing diabetes.
