Erzurum baker introduces new dessert using local molasses and walnuts
Baklava master Selami Atiş has created a new dessert called the 'Erzurum bomb,' inspired by the thin dough and flowing filling of the 'Izmir bomb.' Unlike the chocolate-based original, this version utilizes local ingredients to highlight regional gastronomy.
The filling consists of Karnavas mulberry molasses, local walnuts, and butter, providing a natural sweetness without the use of industrial cocoa creams or artificial sweeteners. The dessert is designed to serve as a nutritious, high-energy snack suitable for the harsh winter conditions of Erzurum.
Atiş stated that the goal was to create a unique identity for the city by using geographically indicated products. The dessert has already seen significant interest from both local residents and tourists, particularly when served warm and flowing.
