Finnish bread experts advise proper storage to keep loaves fresh
The Finnish bakery information service Leipätietos explains that most consumers spoil their bread by storing it in the refrigerator. Bread’s structural ageing is driven by starch changes; at 2‑4 °C the crumb loses moisture to the crust, causing it to dry out and lose crispness.
Experts recommend keeping bread at room temperature in a dry bag, avoiding direct sunlight and unnecessary handling, and freezing portions for long‑term storage, which effectively arrests the ageing process. Sour‑dough (rugby) loaves retain freshness better than wheat varieties, and frozen bread can be refreshed quickly in an oven—microwaving does not restore texture. Proper storage also helps reduce food waste.
These guidelines are aimed at Finnish households, especially during summer cottage visits, where fresh bread is commonly consumed.
