Overview
Home kitchens should keep most fruits, vegetables and pantry items in a cool, dry, well‑ventilated space, reserving refrigeration for high‑risk foods such as meat, fish, dairy, eggs and cooked dishes. Chilling tomatoes, onions, garlic or bread can cause mushiness, unwanted sweetness or texture loss, while honey may crystallise. Zucchini stores best at 10‑15 °C in a dark pantry and should be used within a week if refrigerated. Bread keeps its quality at room temperature in a dry bag or can be frozen for longer storage. Potatoes are optimally stored at 4‑10 °C in a dark, breathable environment – a cellar, wooden crate, perforated bag, cardboard box with dry soil, or similar – and can remain edible for several months when kept below 5 °C in airtight containers. Cold temperatures below 4 °C should be avoided because they convert starch to sugar, leading to greening, sweetness and gritty texture. Recent guidance adds that potatoes and onions should not share the same storage area: potatoes release moisture and, together with onions, emit ethylene, accelerating ageing. Their differing humidity needs (potatoes 90‑95 % vs onions 65‑75 %) mean a shared space is either too moist for onions or too dry for potatoes, increasing sprouting, softening and rotting. Keeping each vegetable in separate, cool, dry, well‑ventilated spaces reduces waste and preserves quality.
