French study links food preservatives to increased cancer risks
A long-term French study involving over 105,000 adults has identified correlations between the consumption of certain food preservatives and an increased risk of specific types of cancer. Based on data from the NutriNet-Santé study, which has tracked dietary habits since 2009, researchers analyzed the intake of 17 different additives.
Key findings include a 14% increase in overall cancer risk and a 26% higher risk of breast cancer associated with higher consumption of potassium sorbate and sulfur dioxide, substances often found in soft drinks, cheeses, and wine. Additionally, high intake of sodium nitrite, commonly used in processed meats, was linked to a 32% increased risk of prostate cancer.
Other additives, such as potassium nitrate, oxalates, and sodium erythorbate, also showed smaller but present correlations. Researchers noted that while these associations are statistically significant, they do not prove a direct cause-and-effect relationship. Potential biological mechanisms may include immune system disruption, inflammation, or negative impacts on the gut microbiome.
