Ghanaian researchers aim to commercialize discarded cashew apples

Researchers in Ghana are working to transform cashew apple waste into a viable commercial product. While Ghana harvests approximately 250,000 tonnes of cashew nuts annually, the accompanying fleshy cashew apples are frequently left to spoil because they can perish within 24 hours of harvest.

Through the MA-CASH (Maximising Gains from Cashew Production for Youth Development) initiative, scientists at the CSIR-Food Research Institute are developing ways to add value to the fruit. This includes creating food products such as juices, juice blends, sausages, and bagels. To address high tannin levels and the fruit's short shelf life, researchers have developed technology that allows the apples to be kept for up to six days before being shipped to processing centers, where they can then be refrigerated for up to a year.
