Hoshino Resorts introduces seasonal menus at Hoshinoya Okinawa and Karuizawa

Hoshino Resorts has announced new seasonal dining menus for its luxury properties, Hoshinoya Okinawa and Hoshinoya Karuizawa.

Hoshinoya Okinawa is launching its “Ryukyu Gastronomy ~Bellezza~” autumn/winter menu, running from October 16, 2026, to February 28, 2027. The menu features a signature reinterpretation of Goya Chanpuru, utilizing Italian culinary techniques to deconstruct and rebuild the traditional Okinawan dish. The menu is inspired by the historical medical text “Gozan Honso” and focuses on the concept of “food as medicine,” incorporating ingredients like bitter melon, island tofu, and pork.

Hoshinoya Karuizawa will offer its “Mountain Kaiseki” early winter menu at the Japanese restaurant Kasuke from November 1 to December 31, 2026. This menu emphasizes local ingredients from the Shinshu region, including wild plants, highland vegetables, mushrooms, game meat, and river fish. Featured dishes include boar shinjo with Inoko-mochi and charcoal-grilled venison, designed to reflect the seasonal transition into winter.
