INABIE standardizes school meal recipes for nutritional quality

The National Institute of Student Welfare (INABIE) utilizes its Gastronomic Laboratory to standardize recipes for the School Feeding Program (PAE) in the Dominican Republic. This technical process involves creating, evaluating, and refining recipes to define specific ingredients, quantities, and preparation procedures for suppliers.

The laboratory's work aims to ensure that school breakfasts and lunches meet strict quality and nutritional criteria while promoting healthy eating habits. Recent adjustments include reducing sodium levels and controlling free sugars to provide more balanced meals.

Additionally, the laboratory evaluates student acceptance of various dishes to identify popular options and minimize food waste. The facilities are also used for training personnel through demonstrations and the production of audiovisual materials. The program serves millions of beneficiaries across public educational centers.
