Dominican Republic school feeding program improvements

Overview

The National Institute of Student Welfare (INABIE) in the Dominican Republic is implementing measures to enhance the quality and safety of the School Feeding Program (PAE).

Initial efforts focused on technical assistance and training for over 200 food suppliers. This training covers the entire production chain, from raw material selection and handling to preparation, packaging, and delivery, to ensure compliance with nutritional and safety standards. Executive Director Adolfo Pérez emphasized that supervision must cover the entire preparation process to ensure consistency for public school students.

To further support these standards, INABIE utilizes its Gastronomic Laboratory to standardize recipes. This process defines specific ingredients and quantities to ensure meals meet nutritional criteria, such as reducing sodium and controlling free sugars. The laboratory also evaluates student acceptance of dishes to minimize food waste and produces training materials for personnel.
