Japanese restaurants launch seasonal wagyu autumn menus

Several Japanese dining establishments are launching limited-time autumn menus featuring wagyu beef and seasonal ingredients.

Hotel New Otani will introduce the ‘New Tokyo Tsukimi Burger’ at its SATSUKI all-day dining locations in Tokyo and Osaka. The burger features a 100% black wagyu beef patty topped with a fried egg from Nagasaki Prefecture, thick-cut bacon, and cheddar cheese. Other seasonal offerings include a ‘Yoshoku’ bowl with shrimp, matsutake mushrooms, salmon, and surf clam, as well as a porcini mushroom pasta.

SHOGUN BURGER is also releasing a seasonal ‘Mountain Mushroom Porcini Tsukimi Burger’ starting September 1, 2026. This version utilizes egg yolk confit instead of a standard fried egg and incorporates five types of mushrooms—porcini, mushroom, brown enoki, shiitake, and maitake—combined with truffle paste. The burger is further accented with burdock root, shiso leaves, and balsamic mayonnaise.
