Japanese shabu-shabu chains launch seasonal duck and mushroom menus
Japanese shabu-shabu restaurant chains are introducing seasonal autumn and winter menus featuring duck shabu-shabu and various mushrooms.
Shabu-shabu Onyasai has launched a weekday-only ‘Nabe-nomi Set’ available from September 16 to December 22, 2026. The plan includes a choice of hot pot, such as duck shabu-shabu, motsunabe, or sukiyaki, paired with a two-hour all-you-can-drink alcohol option for 2,178 yen. The duck shabu-shabu utilizes a specialized ‘First Generation Ultimate Dashi’ made from bonito, kelp, and shiitake mushrooms.
Meanwhile, Shabu-yo is hosting its ‘Autumn Mushroom and Duck Shabu-shabu Fair’ through mid-November. The promotion features an all-you-can-eat selection of six types of mushrooms—including shimeji, enoki, and maitake—alongside duck meat. The fair introduces a new ‘Porcini-scented Mushroom Dashi’ and a ‘Flower Moss Salt Kabosu Sauce’ to complement the seasonal ingredients.
