Japan's seasonal dessert scene is seeing a surge in innovation, particularly with the evolution of kakigori (shaved ice) and fruit-centric sweets.
Chateraise has launched a Shine Muscat fair featuring 15 different products. Utilizing grapes from Yamanashi Prefecture, the lineup includes individual cakes, whole tarts, roll cakes, and traditional Japanese items like daifuku and grape mochi.
In Nara, specialized shops are redefining kakigori. ‘kakigori Houseki-bako’ focuses on historical flavors, such as a tea-based shaved ice incorporating spices and local persimmon leaf tea. Meanwhile, ‘Labo103’ offers experimental varieties, including a savory roasted corn version and nut-and-salted caramel combinations.
In Tokyo, high-end shops are blending international influences and premium ingredients. ‘Italian Kakigori Ricotta’ serves a tiramisu-style shaved ice using authentic Italian mascarpone and pistachio, while ‘Kajitsu to Kori Iwasawa’ emphasizes seasonal fruit, such as premium Yamagata Sato Nishiki cherries, paired with homemade milk ice.
