In Tokyo, high-end establishments are blending international influences, such as ‘Italian Kakigori Ricotta’ serving tiramisu-style shaved ice with authentic Italian mascarpone and pistachio, and ‘Kajitsu to Kori Iwasawa’ which pairs premium Yamagata Sato Nishiki cherries with homemade milk ice.
