Jordi Cruz shares cooking rule for vegetable water temperature

Chef Jordi Cruz has shared a culinary rule of thumb to determine whether vegetables should be placed in cold or boiling water based on how they grow.

According to Cruz, root vegetables and tubers that grow underground, such as potatoes and carrots, should be started in cold water. This method allows the temperature to rise gradually alongside the food, ensuring more uniform cooking from the outside to the interior.

Conversely, for vegetables that grow above the ground, the process should begin with boiling water.
