Kombucha health benefits and fermentation processes studied
Kombucha, a fermented tea produced using a symbiotic culture of bacteria and yeast (SCOBY), is widely recognized for its potential health benefits, including providing probiotics, antioxidants, and aiding digestion. While sugar is essential during the fermentation process to feed the SCOBY and produce beneficial acids like acetic and gluconic acid, the final sugar content can be reduced through specific brewing techniques.
A recent eight-week randomized controlled trial led by researchers at Aberystwyth University investigated the physiological impacts of sustained kombucha consumption. The double-blind study, involving 40 healthy participants, analyzed blood and urine samples to measure changes in the body. The results indicated positive markers associated with improved health levels, specifically regarding certain polyphenols. However, the study found no measurable effect on managing stress levels in participants.
