Brazil's MT Steak cut expands into international markets

The MT Steak, a new beef cut developed from the thick shoulder of cattle in Brazil's Mato Grosso state, was created in 2023 after a contest organized by the Instituto Mato‑grosense da Carne (Imac). The cut is promoted as a cost‑effective alternative to filet mignon, offering comparable tenderness, flavor and versatility for grilling and a range of restaurant dishes.

Imac has showcased the MT Steak at international food fairs, including in China, where it has received positive feedback. Executive secretary Paula Sodré Queiroz says the cut “shows the world the potential of Mato Grosso beef,” while chef Carlos Miranda describes it as “like a filet mignon from the fore‑quarter,” noting its juicy texture and suitability for dishes such as steak tartare, stews and sauces.

The initiative aims to strengthen the reputation of Mato Grosso's cattle industry and increase the export share of Brazilian beef in high‑end markets.
