Molino San Matteo mill inaugurated in Castelfiorentino
The Molino San Matteo flour mill has been officially inaugurated in Castelfiorentino, Italy. Located adjacent to the Cerealia production facility—a company wholly owned by Unicoop Firenze—the new plant integrates the milling process directly with the bakery site for bread, pizza, and other baked goods.
The project establishes an integrated supply chain model in Central Italy, connecting over 100 local Tuscan farmers directly to the consumer. The mill is managed by the cooperative Molini Popolari Riuniti, which brings extensive expertise in grain selection and quality control to the partnership between Unicoop Firenze, Cerealia, and Molini Popolari Riuniti.
Scheduled to begin operations with the 2026 harvest, the facility will focus on 100% Tuscan wheat produced without glyphosate and with zero residues. Approximately 70% of the mill's capacity will be dedicated to this local supply chain, with the remaining capacity available for other processing. The proximity of the mill to Cerealia and Unicoop Firenze's 29 retail outlets aims to shorten the distribution chain and enhance food safety.
