Inauguration of Molino San Matteo mill in Tuscany

Overview

The Molino San Matteo flour mill has been inaugurated in Castelfiorentino, Italy, marking an expansion of the Umbrian cooperative Molini Popolari Riuniti into the Tuscan milling sector. The facility was established through a strategic partnership with Unicoop Firenze and its subsidiary, Cerealia.

The project implements an integrated supply chain model designed to connect over 100 local Tuscan farmers directly to the consumer. A central component of the operation is a “zero-residue agronomic protocol” that avoids the use of glyphosate.

The mill’s production is divided among several streams: zero-residue flours are designated for Unicoop Firenze’s bakery laboratories, while conventional 100% Italian wheat flour will be used by Cerealia. The plant will also produce specialty and organic grains for Molini Popolari Riuniti’s own bakery brands, including ‘Le 5 spighe’ and ‘Pane di Ellera’. Operations are scheduled to begin with the 2026 harvest.
