Monkey 47 unveils 2026 Distiller’s Cut featuring oyster mushroom
Black Forest Distillers has unveiled the Monkey 47 Distiller’s Cut 2026, a limited edition of its Schwarzwald Dry Gin. This year’s release features the oyster mushroom (Pleurotus ostreatus) as its 48th botanical, referred to as the ‘species rara’.
The oyster mushrooms were sourced from Burgpilz, a company that cultivates them sustainably in the historic vaulted cellars of the Wilhelmsburg in Ulm, Germany. The ingredient was integrated into the gin through a process of maceration in neutral alcohol and distillation in copper stills, followed by resting in stoneware vessels.
The resulting spirit is bottled at 47 percent alcohol by volume without cold filtration or added sugar. The flavor profile is described as spicy and elegant, combining the mushroom's umami notes with traditional Monkey 47 characteristics such as juniper, grapefruit peel, and cranberry, alongside hints of anise and nuttiness.
