Mushroom foraging safety: How to identify edible species

Foragers in Poland are advised to take specific precautions to distinguish edible mushrooms from toxic or inedible lookalikes.

To identify the edible Saffron milk cap (mleczaj rydz), foragers should look for an orange or brick-orange cap with darker rings. A key identifier is the milky sap; when the mushroom is damaged, the Saffron milk cap exudes an orange sap similar to carrot juice, whereas the inedible woolly milk cap (mleczaj wełnianka) produces white sap.

Additionally, foragers must distinguish the edible Bay bolete (podgrzybek brunatny) from the inedible Bitter bolete (goryczak żółciowy). While both have brown caps, the Bay bolete features tubes that turn blue-green when damaged, whereas the Bitter bolete's tubes may turn pink or pink-brown. The Bitter bolete also possesses a thicker stem with a distinct brown network pattern, a feature absent in the Bay bolete.
