New artisanal bakeries and sandwich shops open in Slovenia and Croatia

New artisanal food establishments have opened in Slovenia and Croatia, focusing on traditional baking and gourmet sandwiches.

In Slovenj Gradec, Slovenia, Aljaž Ovčar and Tjaša Kamnik have launched Drožina, a bakery where customers can observe the bread-making process. The establishment offers various breads, including buckwheat, corn, and rye, alongside pastries like focaccia, ciabatta, and seasonal items such as traditional Carinthian strudel. The project combines Ovčar’s culinary expertise with Kamnik’s organizational management.

In Zagreb, Croatia, a new sandwich shop named TriM has opened on Vlaška Street. The venture is led by three prominent chefs: Mate Janković, Matija Bogdan, and Marko Palfi. The shop aims to differentiate itself from standard sandwich outlets by preparing most components, including fillings, sauces, and sides, in-house. The menu features specialized options such as the Chicky Italian and the Pig Deal.
