Nova Friburgo winter gastronomy festival showcases local producers
The Friburgo Gastronomia winter edition runs from 23 July to 30 August in Nova Friburgo, Brazil. Organized by the city's Gastronomic Pole, the program invites participating restaurants to select at least one regional ingredient—such as mushrooms, artisanal cheeses, organic strawberries, native honey, ora‑pro‑nóbis, or naturally fermented breads—and create a signature dish that credits the producer on the menu.
The initiative aims to strengthen family‑farm agriculture in the Serra mountain region, shorten supply chains, and boost the city’s reputation as a winter culinary destination. By linking chefs directly with growers, the festival promotes freshness, traceability, and tourism during the high‑season alongside events like the Sesc Winter Festival and the Nova Friburgo Winter Festival.
Featured dishes include Adega Rubi’s Nhoque Ruby with locally sourced mushrooms, Astral Restaurante’s tartelette with native honey, and Bistrô Primavera’s ora‑pro‑nóbis ravioli with goat cheese, illustrating the diverse local flavors now highlighted for visitors.
