Nutrition insights on shrimp shells and malabar spinach

Medical experts and nutritional studies provide insights into the health benefits and misconceptions regarding common food items in Vietnam.

Regarding shrimp consumption, experts from Medlatec General Hospital clarify that shrimp shells are not a significant source of calcium as commonly believed. The shells are primarily composed of chitin. While chitin can be processed into chitosan—which may help reduce fat absorption and manage cholesterol—eating the shells can cause digestive discomfort or physical injury to the mouth and gums, especially in children.

In terms of vegetable nutrition, malabar spinach is highlighted by the National Institute of Nutrition for its high fiber and water content. The vegetable's natural mucilage and fiber support digestive health and help prevent constipation. Additionally, malabar spinach provides essential micronutrients, including vitamins A and C, folate, magnesium, and iron, which support immune function, vision, and oxygen transport in the blood.
