Nutritional advice on bone broth preparation and benefits
Nutrition experts advise caution regarding the nutritional claims and preparation of bone broth. While bone broth provides water, protein, and collagen-derived gelatin, its nutritional value varies significantly based on the type of bone, amount of meat and connective tissue used, and simmering time.
Associate Professor Trần Đình Toán, former Director of the Institute of Clinical Nutrition, notes that bone broth should not be viewed as a substitute for foods rich in protein, calcium, or minerals. There is currently insufficient evidence to widely support claims that bone broth can heal the gut, restore joints, or improve skin health.
Additionally, experts warn about sodium levels. Adding too much salt during the simmering process or using processed broths can significantly increase sodium intake, which is a concern for individuals needing to control salt consumption.
