Adding to these concerns, South Korean physician Kim Min Sun has warned that bone broth may not be a reliable source of calcium. Dr. Kim noted that 100ml of bone broth contains approximately 2mg of calcium, whereas 200ml of milk provides 200mg. The doctor further explained that the calcium in bone broth is in an inorganic form that is difficult for the body to absorb, particularly in children and the elderly.

Dr. Kim also cautioned that the relatively high phosphorus content in bone broth could potentially reduce the body’s calcium absorption efficiency. Regarding its flavor, the physician attributed the perceived sweetness to a combination of salt and glutamine from meat and bones, creating a taste similar to monosodium glutamate rather than indicating high nutritional density.
