Oatly and Nestlé forecast shifting beverage trends for 2027

Industry reports from Oatly and Nestlé USA indicate significant shifts in beverage preferences projected for 2027. According to Oatly’s ‘Future of Taste’ report, which surveyed experts across 21 countries, there is a growing demand for botanical and fermented ingredients. Trends include the use of ginger, hibiscus, and lavender, as well as an increased focus on drink textures, such as coffee jelly.

Simultaneously, Nestlé USA’s 2027 Food and Beverage Trend Forecast highlights a move toward fruit-forward coffee profiles. Data shows a 23% increase in online conversations regarding fruit-flavored coffee, with searches for ‘banana bread lattes’ rising by over 6,000%. The reports suggest that consumers, particularly Gen Z, are seeking more expressive, functional, and dessert-like flavor profiles in their daily drinks.
