Oatly business and product expansion

Overview

Oatly has continued to expand its product offerings and market insights. The company recently introduced three new flavors: Matcha Latte, Popcorn Barista Edition, and Churros Barista Edition, designed for both direct consumption and barista use.

Following a period of business recovery and its first full year of profitability in 2025, the company released its 2026 ‘Future of Taste’ report. Based on insights from over 200 industry experts, including baristas and mixologists, across 21 countries, the report identifies several primary trends. These include the rise of functional or medicinal drinks using botanicals and herbs, such as ginger, hibiscus, and lavender, which 40 percent of surveyed professionals identified as a leading trend. The report also notes a growing interest in fermentation, with 56 percent of experts highlighting its importance, specifically regarding traditional drinks like tepache, kvass, and Turkish şalgam. Additionally, there is an emphasis on unique textures, such as coffee jelly, and a return to cafés as hubs for human connection.

To support these trends, Oatly launched a seasonal recipe lookbook featuring drinks like coconut pandan clouds and preserved lemon matcha. Industry forecasts for 2027, shared by Oatly and Nestlé USA, further indicate a growing demand for botanical and fermented ingredients. Data also suggests a shift toward fruit-forward coffee profiles, noting a significant rise in online interest for flavors like ‘banana bread lattes’. These trends suggest that consumers, particularly Gen Z, are increasingly seeking expressive, functional, and dessert-like flavor profiles in their beverages.
