Potato preparation and storage tips
Effective potato preparation and storage rely on specific varieties and ventilation methods. For making crispy potato pancakes, starchy varieties (Type C or B/C) are recommended because they contain more starch and less water, allowing for a cohesive mass that does not require excessive flour. Using the starch that settles at the bottom of the liquid after draining the potatoes can further improve texture.
To prevent potatoes from sprouting or rotting during storage, especially in small living spaces, it is advised to avoid airtight plastic bags which trap moisture. Instead, using a paper bag with ventilation holes made by a hole punch or scissors can facilitate airflow and prevent mold growth.
