Potato cultivation, culinary management, and storage

Overview

Information regarding potatoes covers both agricultural harvesting and culinary preparation. Gardening techniques emphasize harvesting tubers once foliage has yellowed and dried to allow skin thickening. For long-term storage, tubers should be dried in the sun and kept in dark, well-ventilated areas at approximately 15°C before being moved to cooler storage at 4°C to 6°C. To maintain freshness, it is recommended not to wash potatoes before long-term storage, as the soil layer helps maintain moisture. Avoiding light is essential to prevent greening, which increases solanine levels and makes them unsafe to eat.

To prevent sprouting or rotting, experts from the Harvard T.H. Chan School of Public Health recommend keeping potatoes in a cool, dark, and dry location, away from heat sources like stoves or sinks. They should be kept in breathable containers, such as mesh bags, paper bags, or cardboard boxes with holes, rather than closed plastic bags which trap moisture.

Crucially, potatoes should be stored separately from onions. While both share similar environmental preferences, onions release gases that trigger potato sprouting, while moisture from potatoes can cause onions to soften and rot. Regarding consumption, potatoes that are firm with only small sprouts can be eaten if the sprouts and surrounding areas are thoroughly removed. However, potatoes that are heavily sprouted, green, soft, or wrinkled should be discarded, as these conditions indicate an increased concentration of glycoalkaloids, such as solanine and chaconine, which can cause nausea and digestive distress.

Culinary guidance suggests various methods for enhancing texture and nutrition. For crispy roasted potatoes, experts suggest parboiling, shaking them to roughen the edges, and using semolina to absorb excess moisture. To prevent potatoes from falling apart during boiling, one can add a tablespoon of white vinegar or lemon juice to the water.
