Potatoes stay fresh for months when refrigerated correctly

Properly stored potatoes can remain edible for up to five months. Food‑safety specialists advise keeping them in a refrigerator set below five degrees Celsius, in a cool, dry, dark spot, to prevent sprouting and wilting. Users report that refrigeration extends freshness far beyond the typical week‑long shelf life.

Cooked mashed potatoes have a much shorter safe storage window: when kept in an airtight container at or below 40 °F (4 °C), they remain safe for three to four days. Extra caution is needed when the mash contains dairy, as it accelerates bacterial growth.

Following these guidelines—rapid cooling, airtight storage, and consistent low temperature—helps preserve texture, flavor, and safety for both raw and cooked potatoes.
