Saffron prices reach 900,000 TL per kilogram due to labor-intensive production
Saffron, often referred to as ‘yellow gold’, is one of the world’s most expensive spices due to its labor-intensive production process. In Izmit, Kocaeli, long-time herbalist Nurettin Tezel explains that approximately 150,000 flowers are required to produce just one kilogram of dried saffron. The high cost stems from the need to manually collect and dry the three red stigmas from each purple flower.
Depending on quality, the price of saffron can reach 900 TL per gram or up to 900,000 TL per kilogram. Beyond culinary uses in dishes and desserts, saffron is utilized in the food, cosmetic, and pharmaceutical industries. It is noted for antioxidant properties and potential benefits for heart health, immunity, and memory.
Due to its high economic value, the market is susceptible to fraud. Experts warn consumers to be cautious of ‘safflower’ (aspir), which is often sold as fake saffron. Authentic saffron is characterized by deep red threads and a distinct aroma; when placed in water, it should slowly release a yellow color.
