Sanatorium opens in Vienna with pharmaceutical-inspired mixology

The new “Sanatorium” concept has officially opened in Vienna's city center. Founded by Albert and Jakob Trummer, the venue exports a pharmaceutical-inspired mixology concept originally successful in New York.

The establishment features a clinical aesthetic inspired by Otto Wagner's Jugendstil, utilizing elements such as liquid nitrogen, surgical trays, and syringes for drink presentation. The venue also incorporates the “Ay-Vy” sushi concept from entrepreneur Martin Ho, which recently expanded to Hanoi, Vietnam. The kitchen is led by Japanese chef Yuki Sakamoto.
