Operated by bartenders Jakob and Albert Trummer, the venue utilizes a clinical aesthetic inspired by Otto Wagner’s Jugendstil, employing elements such as liquid nitrogen, surgical trays, and syringes for drink presentation. The establishment exports a pharmaceutical-inspired mixology concept originally successful in New York.

The project includes the relocation of Martin Ho’s ‘X Club’ to the basement and incorporates the ‘Ay-Vy’ sushi concept, which has also expanded to Hanoi, Vietnam. The kitchen at Sanatorium is led by Japanese chef Yuki Sakamoto.

The gastronomic landscape is also expanding, with the opening of the ‘Wiener Würstel Pavillon’ at Hietzinger Tor near Schönbrunn Palace. Launched by Patricia Pölzl, the stand occupies a former mobile gas station pavilion and offers sausages sourced from the Ferdinand Wild butchery.
