Selendi farmers begin traditional molasses production
As the grape harvest nears its end in the Selendi district of Manisa, local farmers have begun the traditional process of producing molasses for winter consumption and sale.
The production follows a labor-intensive method: grapes are crushed in pools to extract juice, which is then filtered and treated with specialized molasses earth to clarify the liquid and reduce acidity. The resulting juice is boiled in large copper cauldrons for several hours until it reaches the correct consistency.
In the Selmanhacılar neighborhood, 80-year-old Veli Güneş continues this cultural tradition by producing molasses from organic grapes grown in his own garden. While the process is physically demanding, producers note that the resulting product is a vital source of nutrition for the winter season.
