São Paulo bans shared condiment bottles in food establishments

Bars, restaurants, and similar establishments in the state of São Paulo are now prohibited from providing shared squeeze bottles of ketchup, mayonnaise, and other condiments. Following a 90-day adaptation period, the regulation issued by the State Sanitary Surveillance Center (CVS) requires that these condiments be offered exclusively in individual portions.

The measure aims to prevent cross-contamination and the proliferation of bacteria. Health officials identified risks such as customers touching bottle nozzles to food that has already been bitten, transferring oral secretions and microorganisms. Additionally, shared bottles often remain at room temperature for extended periods, which can lead to the growth of pathogens like Staphylococcus aureus and Salmonella.

To comply, businesses must provide factory-sealed sachets or single-use disposable containers. Municipal sanitary surveillance teams are responsible for inspections, and establishments found in violation may face penalties under sanitary legislation. The rule specifically applies to condiments served with snacks, sandwiches, and pastries, rather than full meals.
