São Paulo implements new food safety and hygiene regulations
New sanitary regulations in the state of São Paulo, governed by Portaria CVS nº 3/2026, will take effect on October 4, 2026. The rules aim to improve food safety and reduce cross-contamination risks in restaurants, bakeries, bars, and snack bars.
Key changes include a ban on reusable condiment dispensers, such as squeeze bottles for ketchup and mustard, which must now be replaced by single-use, disposable packaging for items left on tables or counters. Additionally, establishments must provide clear warnings on menus regarding the risks of consuming raw or undercooked foods.
For food handlers, the regulations mandate strict hygiene standards, including the prohibition of makeup, artificial nails, and false eyelashes in preparation areas. Staff must also be clean-shaven and complete a mandatory 8-hour technical training course. Delivery services are now required to use tamper-evident seals on packaging and clearly indicate that food should be consumed immediately.
