Soy and tofu nutrition: Benefits and health debates

Soy products remain a polarizing topic in nutrition, offering both significant health benefits and potential concerns. On one hand, tofu is recognized as a high-quality plant-based protein source. Japanese nutritional analyses indicate an amino acid score of 100 for tofu, meaning it covers all essential amino acids. Furthermore, Chinese health analyses suggest that the digestibility of tofu ranges between 92 and 95 percent, significantly higher than the 65 percent digestibility found in direct soybean consumption.

Tofu provides various nutrients depending on the type, such as calcium, potassium, and magnesium, and is naturally cholesterol-free. However, there are ongoing debates regarding excessive consumption. The French health authority has issued warnings about the potential impact of phytoestrogens found in soy on human hormones.

The German Nutrition Society (DGE) recommends a protein reference value of 0.8 grams per kilogram of body weight per day for healthy adults aged 19 to 65, noting that requirements may increase with intensive training.
